Buckwheat pancakes are a great, gluten free option because buckwheat is grain free! These nutty and fluffy pancakes are sweetened with bananas alone, so they are sugar and sweetener free, but still sweet and delicious.
Buckwheat
Buckwheat has been a big deal in Asian cooking for a while, now, but we're finally jumping on board here in the West. So what is buckwheat and why should you use it? Buckwheat is actually a seed based, ancient grain flour, which is why it has a great nutty flavor. It's a bit of a head-scratcher, considering "wheat" is in the name, however it's a gluten-free product.
It's a great, gluten free flour to consider because it's protein and nutrient-rich. It's high in fiber, manganese and magnesium as well as a couple of essential amino acids, lysine and arginine. Keep in mind, essential amino acids are those that our bodies cannot create on its' on, so we need to consume these from outside sources.
Banana Sweetened
Bananas are a great natural sweetener that also acts as a fat would and keeps the pancakes from drying out. Besides being well known for providing potassium, bananas provide a great amount of fiber, vitamin C and vitamin B-6. The lack of any other sweeteners also make it Whole30 and Paleo approved.
Easy to Make Ahead
Pancakes, in general, are a great make ahead breakfast. They freeze and reheat really well without compromising the consistency of the pancake. Bake a double or triple batch and throw the extra batches in the freezer in individual bags for up to 3 months. That way you will have an easy breakfast on the go when you sleep in.
I finally invested in a good electric griddle combo that has changed my life. It's my indoor grill and griddle. It makes pancakes 8 at time, which is pretty freaking amazing.
Serve
Buckwheat pancakes are basically a nuttier, more nutrient-rich version of your standard pancakes. They provide more protein, fiber and vitamins than basic buttermilk pancakes, without all the extra added sugars or dairy. Give them a try and let me know what you think!

Banana Buckwheat Pancakes
Ingredients
- ⅔ cup buckwheat flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ⅛ teaspoon ground cinnamon
- 1 large egg
- ⅔ cup unsweetened almond milk
- 2 ripe bananas (mashed)
- 2 tablespoons coconut oil (melted)
Instructions
- PREHEAT a lightly greased griddle over medium heat.
- IN A MEDIUM BOWL, whisk first five ingredients together.
- IN A SEPARATE SMALL BOWL, whisk the bananas, egg, almond milk and coconut oil; stir into dry ingredients just until moistened.
- SCOOP BATTER (¼ cup at a time) onto the preheated griddle; turn when the batter bubbles on top begin to pop. Cook the second side for around 30 seconds or until golden brown.
