Ingredients

  • 1 cups dates, pitted
  • 3 scoops collagen peptides (33g)
  • ¼ cup creamy, salted, unsalted nut butter
  • 2 tablespoons unsweetened cocoa powder (plus extra for dusting, if desired)
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • ½ teaspoon vanilla extract (alcohol free, if possible)
  • 1 tablespoon coconut oil (optional)
  • ¼ cup chocolate chips sugar, diary free (optional)
  • ¼ cup raw walnuts

Instructions

  • In a food processor, add dates, collagen, nut butter, cocoa, cinnamon, salt and vanilla extract and process for 30-60 seconds or until mixture starts to form a ball. If the mixture is too dry, add the coconut oil.
  • Add the chocolate chips and walnuts to the food processor and pulse 5-10 times until they are evenly distributed throughout the mixture.
  • Using a cookie dough scoop, grab 1 tablespoon at a time and press into balls. The heat from handling the mixture will soften them a bit, so they will need to be chilled for 5-10 minutes to set.
