Ingredients

  • ½ cup extra virgin olive oil
  • ¼ cup water
  • 3 tablespoons lemon juice (1 large lemon or 2 small)
  • 2 teaspoons Dijon mustard
  • 1 tablespoon minced shallot
  • 1 garlic clove minced
  • 1 tablespoon honey1
  • 1 tablespoon minced fresh parsley
  • 1 teaspoon minced fresh thyme
  • 1 tablespoon minced chives

Instructions

  • In a medium bowl or two cup measuring cup add all of the dressing ngredients and whisk vigorously to fully emulsify. Serve immediately or store in an airtight container for up to 7 days. Shake or mix before using to incorporate the ingredients once they've settled.

Notes

  1. STORAGE: Store in the fridge for up to 1 week in an airtight container
  2. MAKE IT WHOLE30: Omit honey for Whole30, or substitute pure maple syrup.
