Avocado BLT Chicken Salad Wraps are an easy healthy lunch recipe. This salad is Whole30, Paleo, and Dairy Free! #paleorecipe

Healthy avocado chicken salad is a quick and easy solution to a fresh, no-heat lunch or lunch. Diced chicken, bacon, tomatoes, and avocado are tossed in a smokey and creamy dressing.

This tasty chicken salad goes well in lettuce cups, over a bed of springs mix, or even over noodles to make a quick pasta salad.

This is a great, healthy meal prep salad too. If you're looking for more meal prep lunches, look at Quick Sauteed Garlic Shrimp, Cajun Chicken and Sausage Skillet, and Cranberry Chicken Salad.

    Ingredients for this chicken salad

    Instructions

STEP 1: Crisp the bacon. In a large skillet, cook bacon over medium heat for 2-3 minutes on each side, or until crispy. Remove the bacon from the pan and allow it to cool on a paper towel-lined plate.

STEP 2: Cook the chicken. Season the chicken with ½ teaspoon of salt and ¼ teaspoon pepper and place into the pan with the bacon drippings. Cook 3 minutes per side over medium heat, or until the inside is no longer pink. Remove from the pan and allow to cool.

STEP 3: Make the dressing: In a small bowl, whisk together mayo, lime juice, garlic, and paprika. Set aside.

STEP 4: Chop and combine: Once the chicken and bacon are cool, chop into ½-inch pieces and place in a large bowl. Add the tomatoes, green onions, and avocados to the bowl quickly toss to evenly distribute the ingredients. Pour the mayo mixture into the bowl with additional salt and pepper to taste and toss again to coat.

    Storage

Store the salad in an airtight container in the fridge for up to 2 days.

I do not recommend freezing this recipe due to the creamy dressing and avocado.

    FAQ

How do you make this recipe ahead without the avocado browning?

The lime juice in the dressing will help a bit with browning, but only for about a day. If you're making this ahead, I'd suggest packing an avocado half separately and scooping it into the recipe before eating.

    What's the best pre-made Whole30 approved mayo?

I prefer Chosen foods avocado mayo.

Sorry about that! I've used both paprika and chipotle chili powder. I love both, but generally, I use paprika. Thanks for the heads up on that!

You can! Because of the citrus juice on the avocado, it usually stays good for around 3 days.

These are delicious! I used Hellman’s mayonnaise and added in avocado. Great meal for me being lactose intolerant and minimizing my carb intake.

I don’t love green onions to overpower, so I only used one but this is so fresh and yummy! I love something that feels like a splurge but is full of nutrition too!
