If you struggle to get a healthy, protein-packed breakfast in the morning, this Meal Prep Breakfast Taco has got you covered. Smokey sautéed sweet potato hash, taco meat, and scrambled eggs topped with salsa make an easy to prep, Whole30, and Paleo breakfast.

Ingredients and substitutions
- Olive oil. Any cooking fat will do. Feel free to substitute with coconut oil, ghee, or avocado oil.
- Sweet potatoes. Red potatoes are another delicious choice.
- Bell pepper
- Red onion
- Ground beef. Substitute any ground meat here, if needed. Bison, turkey, venison, and pork are all very tasty.
- Taco seasoning
- Eggs. If you're cutting calories, substitute egg whites here.
- Salsa
- Avocado
- Salt and pepper
- Water
Instructions
STEP 1: Cook the veggies. In a large skillet, heat 1 tablespoon of olive oil over medium. Add the sweet potatoes, peppers, onions, sea salt, and black pepper to the pan. Sauté the vegetable mixture until potatoes have softened, about 8 minutes. Transfer to a bowl and set aside.
STEP 2: Cook the taco meat. Add the ground beef to the skillet and continue to cook over medium heat until browned. Next, add taco seasoning, arrowroot starch, and water. Continue to cook until the sauce has thickened. Remove the beef from the pan to a bowl and set it aside.
STEP 3: Scramble to eggs. Heat the remaining oil in the same pan, still over medium heat. When the oil is hot, add eggs and additional salt and pepper to taste. Cook the eggs until they are cooked to your desired consistency, then remove from the heat.
STEP 4: Assemble the bowls. In five meal prep containers, divide out the sweet potato mixture, the seasoned beef, eggs, salsa, and avocado evenly. These can be served immediately or refrigerated for up to 5 days.

Can it be frozen in individual portions to eat later?

Absolutely you can! I do this a lot with meal prep containers that have a really good seal. Reheating time is going to vary based on your microwave, but I would thaw them in the fridge and heat them for 60 seconds on high.

How long would this last if kept in the freezer? My whole family loves it so I am hoping to make a huge amount at once so it would last for a long time. I'm a working mom son only have time to cook about once a week. Thank you!

Because of the eggs, I wouldn't freeze for longer than 2 months. If you want to cook up everything but the eggs and freeze and add the eggs after thawing, you can push it to 4 months.

Love this dish!! It’s helping me branch out in what I eat while doing the Whole 30! However, I think 3 tablespoons of taco seasoning is a bit much, so I’ll probably knock it down to one next time.
